I spend a lot of time each day on pintrest.  In order for me to pin a recipe, it has to be something I could really see us making, which means quick/easy prep,  no weird ingredients I wouldn’t normally buy and easy cooking instructions.

I had seen a lot of different bacon wrapped chicken recipes on pintrest, and come on, who doesn’t love bacon!  We recently got a Sams club membership, and a chest freezer to go with it so we have a lifetime supply whole lot of chicken and bacon (among other things as well).  

We read a few different recipes to get the overall idea of how to make it, and then decided to just wing it.

Bacon Wrapped, Cheese Stuffed Chicken

Bacon and ChickenFirst Tony pounded out our boneless skinless chicken breasts with a meat tenderizer to get them pretty flat.  While he was doing that, he had the oven pre-heating to 400°.
Next, we laid out some bacon on a plate. 3-4 pieces going one way, two going the opposite.
Bacon Cream Cheese and ChickenNext we laid the chicken over the bacon and added some cream cheese.
We used plain, but plan on using chive and onion flavor next time. 

Then we sprinkled some shredded cheddar cheese over the top. 

Next we carefully folded the bacon over top of the cheese.  We found we didn’t need toothpicks to keep it together, but if you are having trouble I’m sure they will come in handy! We then laid the chicken, seam side down in our stonewear cookie sheet that was already warmed in the oven.  

Bacon Wrapped, Cheese Stuffed ChickenWe baked it at 400° for 45 minutes, and flipped it half way through. After the 45 minutes, we turned the oven up to broil to make the bacon crispy.  Tony watched it closely to make sure it didn’t burn.   We didn’t turn it over to crisp the other side of the bacon, which I will make sure we do next time, because I like my bacon very crispy!
It was so yummy! We are thinking of maybe even adding some onions next time for extra flavor!
