A few weeks ago I did a post about how you could use a vegetable spiralizer and Tuttoroso tomatoes to create lighter dishes for spring. The vegetable spiralizer that Tuttoroso recommends is Inspiralizer which will begin shipping April 25.
I opted to buy the more affordable SpiraLife Vegetable Spiralizer. When it arrived I was pleased to see it came with a tiny cleaning brush so you can get out any stuck veggies without the risk of cutting your hands on one of the two different blades.
I went to the store to get some Zucchini and Yellow Squash but they only had really small ones everywhere I went. I ended up buying two Zucchini and one squash. I ended up only using one of Zucchinis and the one squash since I was really only making lunch for myself.
The SpiraLife Vegetable Spiralizer was very easy to use and was really fun to use. At the end you will be left with a little nub of vegetable that you can just slice / dice however you want. The zucchini and yellow squash were very moist so I set them on a paper towel to get out extra moisture. While they were drying off, I added some oil to a large pan and added some minced gardlic and red pepper flakes. In a pot I started warming up some sauce we had made previously. Once the sauce was hot, I added the zucchini noodles for about 3 minute so they were tender.
Once the noodles were tender, I put them in a bowl and added the sauce on top. This light dish tasted amazing and kept me full until my dinner break at work!
I loved the idea of using vegetables to make noodles so much that we are going to be planting Zucchini and yellow squash this summer!
