You might remember last year for the Red Pack “Toss In The Flavor” Promotion we featured a salad recipe that included diced tomatoes, strawberries and blueberries.  You can view the recipe for Chicken Blueberry Chopped Salad here.

This year’s “Toss in the Flavor” promotion will run from May 13 to June 10 on Facebook. During this period, Redpack will share their new collection of Redpack salad recipes featuring Redpack Petite Diced Tomatoes along with seasonal fruits and vegetables.

This year Redpack sent me a few tomato products as well as some new summer salad recipes for free. We decided to make the  Sassy Chicken Salad

 Sassy Chicken Salad in a Bowl

Ingredients

1 (14.5 ounce) can Redpack® Petite Diced Tomatoes, drained
1 (4 ounce) can diced green chilies
1/2 cup light mayonnaise
1 slice honey
2 cups chopped cooked chicken
1 cup sliced celery
1 cup grapes, halved
1/3 cup chopped pecans, toasted

Directions

  • In a medium bowl, combine petite diced tomatoes, green chilies, mayonnaise and honey.  Stir in chicken, celery, grapes and pecans.
  • Cover and chill.  Maybe served in hollowed out melons, avocados or papayas. Also makes a great sandwich when served on a Croissant.

 Sassy Chicken Salad on Roll

We omitted the pecans just because two of the local grocery stores we went to did not have them.  I put the chicken salad on focaccia rolls and it was delicious!  The honey and grapes really balance out the spicy green chilies. This chicken salad is perfect for sitting on the back deck and enjoying a nice relaxing lunch in the nice weather!
